Who on Earth would mind having these crispy sugar dipped desserts! JALEBI is a speciality in India…..it is a delicacy served in the narrow lanes of Varanasi as well as numerous other parts of the country, with different ad-ons and flavours like werving with Milk or Curd or even Rabri and after being flavoured with Kesar it becomes the Kesaria Jalebi.
I am sharing a simple recipe for homemade Jalebis and it is perfect to begin with!
(Good to serve 5-6 people)
Maida (All-purpose flour)- 2 cups
Corn Flour- ½ cup
Thick Curd (Dahi)- almost 1.5 cups
Baking Soda- ½ spoon
Kesar (Saffron)- few strands
Green Cardamom( Choti Ilaichi)- 1 pinch, powdered
Sugar- 2 cups
Water- 3 cups
Ghee for frying
Take large bowl, mix Maida, Corn Flour, Saffron, Cardamom powder, Baking soda, Curd, 1 Table spoon ghee. Give a good mix to all the ingredients to make a thick batter and keep it aside in warm place for at least 5-6 hours.
After 5-6 hours, when the batter fermented nicely, give it a mix….it’s ready to be deep fried.
Now put the batter in cloth cone or plastic cone of your choice and make small opening.
Take sauce pan and put 3 cups of water and 2 cups of sugar into it, keep stirring and boiling it, until a thick sugar syrup is ready.
Now take a deep frying pan and add ghee to it in order to deep fry the Jalebis. When the ghee is hot start frying the Jalebis from the cone in the shapes you desire. When the Jalebi turns deep brown in color, take it out the ghee and put into the sugar syrup for 1 min. After a min take it out and serve with love!
