Lauki Pista Kheer is an experimental dish that I discovered while trying to cook Lauki Halwa. I had a lot of pistachios left with me so the idea came to my mind about mixing it into the Lauki Halwa and making a Lauki Pista Kheer, rather than making the same old Halwa!
As you all are well aware of Lauki (Bottle gourd) is very good for a healthy heart, weight loss, eases diarrhea, and many more…..so do try this simple recipe of Lauki Pista Kheer and do let me about the taste in the comments.
- Preparation Time: 30 min
- Cooking Time: 40 min
- Serves 4 people
- Tbsp = Table Spoon
- Tsp = Tea Spoon
Lauki (Bottle-Gourd) – 200gm, grated (or 2 cups)
Pista (Pistachio) – ½ cup, grinded
Milk – 3 cups
Sugar – ½ cup
Elaichi (Cardamom) – 1, powdered
Khoya or Condensed Milk (optional) – ½ cup
Cashew and Raisins (optional for garnishing) – few pieces
Take a large sauce pan, put it over high flame, add grated Lauki (Bottle Gourd) and 1/2 cup water and let it boil. You can do this while covering the pan with lid, and this will eventually speed up the process.
You can check whether the Lauki is cooked fully or not by taking a small quantity of it in a bowl and pressing it with your fingertips, if it easily gets mashed then its cooked. Otherwise keep boiling it with a little more water if needed.
Once the Lauki is cooked, add milk to same pan and cook for 5-7 min, until the milk thickens a bit and Lauki is nicely mixed with it. At this point add the grinded pistachios, give everything a good mix and cook it for another 5 min. Now add sugar, followed by Elaichi powder and if you want you can add khoya or condensed milk to the kheer.
After cooking for 2-3 min more, remove the pan from flame and let it cool, you can put it in the refrigerator for the same. Once the kheer has cooled down put it into serving bowls and garnish with dry fruits of your choice.
Your Lauki Pista Kheer is ready to be enjoyed.
